Instructions

Ingredients:

  • 1 tbsp olive oil
  • 2 tbsp butter
  • ½ cup red onion, chopped
  • ½ cup red bell pepper, diced
  • ½ cup green bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups corn (fresh or frozen)
  • Salt and pepper, to taste
  • Optional garnish: fresh herbs like basil, chives, or parsley

Method:

  1. In a large skillet, heat the olive oil over medium heat until warm.
  2. Add the chopped red onion, red bell pepper, and green bell pepper. Sauté for about 5 minutes, or until the peppers are tender and the onion is translucent.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the butter to the skillet and allow it to melt completely.
  5. Stir in the corn kernels. If using frozen corn, cook until heated through. For fresh corn, cook for about 5 to 7 minutes, stirring occasionally, until the kernels are tender but not mushy.
  6. Season the mixture generously with salt and pepper to taste.
  7. Remove from the heat and stir in any desired fresh herbs just before serving.
  8. (Optional: red pepper flakes, parsley for garnish)
