Instructions
Ingredients:
- 2 teaspoons smoked paprika
- 1 teaspoon kosher salt
- 2 teaspoons of chili powder
- ¼ teaspoon cayenne
- 2 tsp salt
- 2 tsp cracked black pepper
- 2 lbs. piece of salmon cut in half (skin on)
- 2 tbs olive oil
- Romaine lettuce (enough for 4 servings)
- 1 tablespoon fresh lemon juice
- 1 block of Parmesan cheese
- Cracked black pepper (to taste)
- 1 12-16 Bag of Croutons (store bought)
- 2 cups of cornbread cut into ½ inch chunks (homemade or store-bought)
Method for Blackened Seasoning:
1. Using a small bowl, mix the smoked paprika, chili powder, cayenne pepper, salt, and pepper until all spices are blended together. Set aside until you are ready to season the salmon.
Method for Blackened Salmon
- Combine all the dry spices in a small bowl, mix to create the blackening spice blend, then
- set aside.
- Heat a cast-iron skillet over medium-high heat and generously coat it with olive oil.
- Pat the salmon dry with a paper towel to absorb any excess water, then season the salmon with the blackening spice blend, making sure it is completely covered on both sides.
- Place the salmon skin side down into the skillet. Allow to cook for 5 minutes on each side.
- While the salmon cooks, place a Dutch oven filled with 2-3 inches of vegetable oil over medium-high heat. Once the oil is hot, add the diced cornbread to the oil and cook for 3-4 minutes, until golden brown. Remove from oil and drain on a paper towel until you are ready to build the salad.
Ingredients for Caesar Salad Dressing:
- 1 Medium lemon Juiced
- 4 cloves of minced garlic
- 2 tbs of Dijon Mustard
- 2 cups of mayonnaise
- 3 tbs Worcestershire sauce
- Salt to taste, pepper to taste
Method for Caesar Salad Dressing:
- Using a medium-sized mixing bowl, add the lemon juice, garlic, and Dijon mustard and mix well. Add the mayonnaise, then continue mixing, followed by the Worcestershire sauce, salt, and pepper. Continue stirring until all ingredients are evenly combined.
Method for Building the Salad:
- Rinse the Romain lettuce, pat dry, and cut into bite-size pieces, and place in a bowl. Coat with the homemade Caesar dressing, then toss to ensure all lettuce is evenly coated.
- Add the store-bought croutons to the salad and gently toss, making sure the croutons are evenly distributed throughout the salad.
- Transfer the salad to a serving platter and place the cornbread croutons on top, along with the blackened salmon. Season with salt and black pepper to taste, then top with shaved Parmesan cheese.
